One of the staple pieces of equipment in any bakery is the Prover and here at Brook we offer various models by several manufacturers to cover every requirement.
For smaller bakeries looking for their only prover, or sites where space is limited, we offer single door reach in models that feature simple manual controls and manual fill systems. The units, which are compact and save a great deal of space, are manufactured in Europe by Salva. They feature a full glass door so product can be monitored during the prooving cycle. Being mounted on heavy duty castors allows the unit to be transported within the bakery for increased flexibility.
We also supply Williams reach-in Provers which are available as manual fill or auto-fill models, with a slightly larger footprint these models feature adjustable tray slides and a large internal capacity. The digital controls are easy to use and the full stainless steel exterior is robust to work well within larger bakeries and industrial settings.
Roll-in models are manufactured here in the UK by our own engineers and in Italy by Polin.
We supply our own Brook bespoke modular prover rooms which are configured to suit exact customer requirements and restrictions. These models are manufactured with a full stainless steel construction using heavy duty panels. The rooms feature soft close doors, a robust heating and humidity system with industrial elements and independent digital controls for heat and humidity. Suitable for any environment from small craft bakeries to large industrial factories these in-house manufactured options are ideal for meeting a sites exact needs.
Polin provers are available in a range of pre-determined sizes and configurations to take between 1 and 15 full height racks. The rooms are available in a choice of finishes to suit the site and budget and with a choice of floor, door and control options to offer program flexibility to suit bakeries with various product lines with differing needs
Panels are insulated with CFC free high density injected polyurethane foam and all internal junctions are fully rounded to aid easy rack movement. Self-closing doors with ergonomic full length handle with a push safety opening all enhance the specification and aid use a window within each door allow the prooving cycle to be monitored without loss of heat or humidity in the room. Multidirectional air flow distribution and stainless steel horizontal and vertical ducts ensures effective results.
