Polin Ciabatta Dividers provide accurate scaling of not just ciabatta but other high hydration and difficult to handle doughs.
The Polin craft models are available in three widths, 165mm, 240mm and 300mm, to suit various facilities depending on the end product required. Machines are supplied with a selection of dividing knives to increase and vary the weight range and output level.
All machines are available with a choice of simple manual controls, digital programmable controls or touch screen programmable controls which are capable of adjusting piece length, weight, production speed and moulding options to various degrees. With large capacity intake belts the machines can not only be used as standalone dividers but also integrated into bread plants and production lines. A solid stainless steel construction aids the robust craftsmanship and ensures durability within the bakery.
Also available is the Polin industrial model which features the same reliable, consistent and accurate dividing mechanisms with the advantage of being able to handle a very high throughput. The industrial version can produce products from 20 – 2000 grams and can automatically tray up as the pieces are moulding. Optional extras include stamping devices, output conveyors and intermediate provers.
